Apple Pecan Coffee Cake



2 cups baking mix

1/3 cup packed brown sugar

1/2 cup chopped pecans

1/2 tsp cinnamon

1/3 cup milk

1 cup chunky applesauce


Mix brown sugar and 1/4 cup of the pecans; set aside.

In a separate bowl, blend baking mix, 1/4 cup pecans,

cinnamon, milk and applesauce. Beat with an electric

mixer about 30 seconds. Spread into prepared dish.

Sprinkle with brown sugar mixture.


. Microwave on high,

rotating dish every 3 minutes until top springs back

when touched lightly and cake begins to pull away from

the sides of the dish - about 6 to 9 minutes. Cool 10

minutes on heatproof surface (not wire rack).
