Beths Recipes, Casseroles, Christmas, Vegetables and Side Dishes


1 1/2 sticks butter

2 cup seasoned croutons

2 eggs

1 lg. can creamed corn (may substitute frozen corn for creamed corn)

Salt & pepper to taste

1 sm. onion, chopped

1 bag frozen broccoli, cook & cut up


Melt the butter in a casserole dish and add the creamed corn and broccoli and half crotons. Set aside. In a mixing bowl, add 2 eggs, salt, pepper and onion to the corn. Add broccoli and half of the crouton mixture. Pour into a baking dish and top with the remaining croutons. Bake at 350 degrees for 35 to 45 minutes.


I usually make this for Christmas Eve dinner. With steak and shrimp.
