1 ~ 2 pkg. fresh spinach
6 hard boiled eggs chopped
6 ~ 8 slices cooked bacon crumbled
1 can water chestnuts sliced
1 can bean sprouts (use 1/2 ~ 3/4 of can)
1 can bamboo shoots (I cut them each in half)
Rinse and dry spinach, add to large bowl, remaining ingredients and toss. Add dressing over all.
Great to make ahead and add dressing at serving time. Also, tastes great a day later.
